How to Make a Cake with Just 3 Ingredients

A deliciously moist cake made from just 3 ingredients.... it's totally possible!
  • 8 large eggs
  • 225g unsalted butter
  • 450g good quality dark chocolate
  1. Preheat your oven to 160 degrees celsius.
  2. Grease the base and sides of a 20cm springform tin very well and then line the base with baking paper.
  3. Use foil to cover the outside of the tin.
  4. Sit the springform tin inside a large baking tray (it needs to be large enough that the springform pan can sit flat).
  5. Beat the eggs for at least 5 minutes or until they have doubled in size.
  6. Break the chocolate into pieces and place into a microwave safe bowl.
  7. Add the chopped butter to the chocolate pieces.
  8. Melt on 50% power in the microwave on 30 second bursts for 2-3 minutes or until the chocolate and butter has melted (stir every 30 seconds with a dry metal spoon).
  9. Gently fold ¼ of the egg mixture into the chocolate.
  10. Repeat 3 more times with the remaining egg mixture.
  11. When the mixture is combined, pour it into the springform tin.
  12. Boil a jug of water and then carefully pour it into the baking tray until it covers ⅔ of the sides of the springform pan (make sure no water gets into the chocolate cake!).
  13. Bake in the oven for 25-30 minutes or until the chocolate cake begins to set on the outside edges (but not in the middle).
  14. Remove the baking tray from the oven and then set aside until the boiling water has cooled.
  15. When the water has cooled, remove the springform tin from the baking tray filled with water and set aside to cool.
  16. Place the cooled cake (still in the tin) into the fridge and leave for several hours (or better yet, overnight).
  17. Remove the cake from the springform tin and discard and baking paper.
  18. Decorate with chocolate ganache, icing sugar, fresh berries, chopped chocolate etc.
  19. Serve warm or cold.
