Beston’s Fried Rice Recipe

This Fried Rice will fill all the family and is low in fat, and high in nutrition because it’s loaded with Beston’s finest, farm fresh vegetables and is absolutely delicious and packed with flavour.

Ingredients

2 cups Real Food Organic Brown Rice
2 cups Beston Market Farm Fresh cauliflower cut into florets
2 cups Beston Market Farm Fresh broccoli cut into florets
2 Beston Market Farm Fresh carrots, peeled and cut into sticks
2 Beston Market Farm Fresh spring onions, thinly sliced
2 Beston Market Farm Fresh stalks celery, thinly sliced
2 cups Beston Market Farm Fresh wombok, finely chopped
1 Beston Market Farm fresh red chilli, de-seeded, thinly sliced
2 Beston Market Farm fresh cloves garlic, crushed
3 pieces Beston Princi Small Goods Free Range bacon, thinly sliced
2 Beston Market Farm Fresh eggs, lightly beaten
2 tsp Sesame Oil
2 tsp Soy Sauce
Sweet chilli sauce to serve (optional)

Method

Cook the rice according to directions, drain and set aside. You can do this earlier in the day if you wish and keep it in the fridge, uncovered to dry out.

Heat a large non-stick wok (or fry pan) over high heat. Add the bacon and stir fry until golden. Remove and set aside.

Add the beaten egg and swirl around the sides of the wok to coat. Leave until it starts to peel away from the sides of the wok. Then roll it up, remove to a chopping board until cool enough to handle and roughly chop.

Add the cauliflower, broccoli, carrots, chilli and garlic to the pan with ¼ cup of water and stir fry until vegetables are tender but still crisp. Add the wombok, spring onions and celery last to keep as crisp as possible.

Season with sesame oil and soy sauce, toss to combine.

Serve.
