Easy Christmas Shortbread Recipe

Christmas Shortbread Recipe

When I think about Christmas baking, Shortbread is one of the first things that comes to mind. I love having a tin of homemade shortbread on hand to offer visitors when they drop by, and it also makes a great Christmas gift for friends, family, teachers and neighbours.

This is an easy recipe to put together, my biggest tip is to make sure you roll your dough on a cool bench – otherwise you may find it will stick (even with a floured bench) and it will be difficult to work with.

I enjoy my shortbread as is, however if you want to make it a little more ‘fancy’ why not dip it in melted chocolate or decorate with silver cachous before baking?

Easy Christmas Shortbread Recipe

Ingredients

  • 250g softened butter
  • 125g caster sugar
  • 25g rice flour
  • 5 drops of vanilla essence
  • 375g plain flour

Instructions

  1. Preheat oven to 190 degrees.
  2. Beat together the butter, sugar and rice flour until they turn white. Add a few drops of vanilla essence and continue to beat.
  3. Gradually add the flour to the mixture, whilst continuing to mix on a low speed until a paste forms.
  4. Turn mixture onto a cool bench dusted with flour and work until a smooth ball forms.
  5. I split my ball into two and place one in the fridge, covered in glad wrap.
  6. Roll the other ball until apron 1cm thick and use cookie cutter to make desired shapes.
  7. Bake in oven for approximately 12 minutes until edges start to turn a golden brown.

Lauren founded her website Create Bake Make as a way to justify the ridiculous amount of baking she loves to do. She has a super sweet tooth and enjoying a slice of cake (or two) is one of her guilty indulgences. As a Mum of two little boys, when she isn't creating fun activities for the kids or breaking up arguments over toy trucks and cars, you will find her in the kitchen baking up a storm - or hiding in the pantry with the latest cooking magazine and a hot cup of coffee!
