Fully Loaded Baked Potatoes Recipe

You know you’re deep into comfort food territory when you stumble across something as awesome as fully loaded baked potatoes! And they are just as good as they sound.

With toppings such as crispy bacon, tasty cheese, tomato, corn kernels, red onion and sour cream, these potatoes are seriously the bomb. Kids love them and it’s easy to leave out any toppings they don’t like or add extra ones they do. Cheap, versatile and tasty – that’s a tick in every box!

Serves: 4
Prep time: 5 minutes
Cook time: 1 hour
Difficulty: EASY

Ingredients:
4 large potatoes, washed and unpeeled
Oil spray
2-3 rashers of bacon, chopped,
1 small tin of corn kernels, drained
2 tomatoes, diced
1 red onion, finely diced
Sour cream
Grated tasty cheese
Salt and pepper
Chopped fresh parsley to serve

Method:
1. Preheat your oven to 180°C
2. Scrub potatoes until there is no longer any dirt on the skins (or just used pre-washed ones) and prick all over with a fork. Spray potatoes with oil spray and wrap each potato in aluminium foil. Bake in oven for one hour or until tender, depending on size of the potatoes. Check by pricking again with a fork or giving them a gentle squeeze.
3. Towards the end of the cooking time, fry bacon until crisp and golden and prepare other toppings.
4. When potatoes are cooked, place each on in a bowl and cut a cross almost all the way through them to split into quarters. Place a spoonful of sour cream into the centre of each potato and top with remaining toppings. Serve.

Notes:
Cut down the cooking time by wrapping them in paper towel and cooking in the microwave for 5 minutes and then oven baking unwrapped for 30 minutes.
Add avocado, roasted capsicum, or baby spinach
Forget the toppings and add leftover spaghetti bolognaise or savoury mince
