Gingerbread Cupcakes with Cinnamon-Clove Frosting Recipe

Gingerbread Cupcakes with Cinnamon-Clove Frosting Recipe

Prep Time: 30 minutes

Cook Time: 20 minutes

Yield: 12

Ingredients

  • For the cupcakes:
  • 80g butter
  • 100g caster sugar
  • 120ml  golden syrup
  • 2, medium egg
  • 2 egg yolk
  • 155g plain flour
  • 4g McCormick Ginger, Ground
  • 7g baking soda
  • 120ml milk, hot
  • For the frosting:
  • 60g butter, softened
  • 110g cream cheese, softened
  • 170g caster sugar
  • 2mL lemon juice
  • 6g McCormick Cloves, Ground

Instructions

  1. Preheat oven to 180C. Grease a 12-cup muffin tin.
  2. Cream the 80g of butter with the 100g caster sugar. Add golden syrup and all the egg.
  3. Sift and mix together the dry ingredients for the cupcakes, except the baking soda.
  4. Dissolve baking soda in the milk.
  5. Add flour mix to butter mix, stir well.
  6. Mix in the milk. Pour combined mixture equally into the greased muffin tin.
  7. Bake for 20 minutes or until a skewer inserted into the centre comes out clean.
  8. For the frosting, beat together the 60g butter and the cream cheese.
  9. Add the 170g of sugar and continue beating until light and creamy.
  10. Add the lemon juice, cloves and cinnamon.
  11. Once muffins are cool, remove from tray and apply the frosting. Sprinkle extra cinnamon over the top if desired.
