Smoky Chilli Cheese Dip Recipe

Ingredients

  • 2 tbsp. plain flour
  • 2 tbsp. butter
  • 1 1/2 cups milk
  • 200g smoky cheese, reserving a little
  • 2 tsp Tabasco sauce
  • 1/4 - 1/2 tsp chilli powder or to taste
  • salt and pepper
  • small sourdough loaf of bread
  • carrot and celery sticks & crackers to serve

Instructions

  1. Melt the butter with the flour over medium heat in a medium saucepan. Cook, stirring with a wooden spoon for a minute.
  2. Gradually add the milk, a tablespoon at a time to start off with and stir into the mixture until smooth.
  3. Cook, stirring constantly until thickened.
  4. Add the cheese, tabasco, chilli powder, salt and pepper to taste and stir until melted.
  5. Transfer to a bowl and refrigerate until ready to serve.
  6. Pre-heat oven to 180C/160C fan-forced/350F.
  7. Scoop out the centre of the bread loaf and fill with the cheese dip. Sprinkle the reserved cheese over the top and bake for approximately half an hour or until melted and hot in the centre.
  8. Serve immediately with the vegetable sticks, crackers and scooped out bread bits.
