Salmon with Balsamic Pearls (The Easy Way)

Honestly, this might be the simplest “fancy” dinner you’ll ever make. It only takes about 15 minutes and takes all the pressure off cooking fish.

The thing about salmon is that it’s pretty hard to mess up, but it’s also easy to make boring. That’s where this recipe is so great: salmon for dinner will now have everyone saying YES PLEASE!

Ingredients:

120g salmon fillets per person

Extra Virgin Olive oil

A lemon (just for the zest)

Salt and pepper to taste

A jar of Sticky Balsamic Pearls (I like the lemon ones for this, but the pomegranate works too if you want a bit more *zing*)

Some fresh dill if you have it

Method:

Heat your oven to 200°C.

Put the salmon on a baking tray, drizzle with olive oil, add some salt, pepper, and lemon zest. Stick it in the oven for about 10 minutes.

That’s it for the cooking part.

When it comes out, spoon some pearls over each piece. Don’t be shy with them – they’re what makes this dish special.

The pearls burst when you bite them, so every mouthful has this little surprise of sweet-tangy flavour. Kids love them because they’re like edible bubbles, adults love them because they look and taste sophisticated.

Serve with whatever veggies you have available, or some rice. Easy. Tasty. Done.
