Super Easy Macaroni and Cheese with Bacon Recipe

Super Easy Macaroni and Cheese with Bacon Recipe

So I was all out of ideas for what to cook for dinner and I was going down the “eggs on toast” path when I asked my youngest daughter what I should make. She announced that she would like her favourite macaroni cheese because then she’d finish it quickly so she’d get the first bath of the evening. With 3 older siblings you have to have your priorities in order, and clearly Miss 5’s priorities are right on the money.

This simple mac and cheese recipe is borderline common knowledge. Fry bacon, boil pasta, make white sauce, dump cheese in it, mix it together.

But sometimes you just need to be told, you know? 🙂

macaroni cheese
I always buy blocks of cheese and grate it as required – it is much cheaper and tastier, and melts better. Probably better for you too, but don’t take my word for it, I regularly cook with butter and bacon. What do I know?

Ingredients:
3 rashers of bacon, diced
250g dried macaroni pasta
50g butter
1 heaped tablespoon of plain flour
1¾ cups milk
2 cups grated tasty cheese

Method:
1. Cook pasta as per packet directions
2. Pan fry the bacon until cooked and slightly crispy, set aside
3. Melt the butter in a medium saucepan and add the flour, whisking to combine over medium heat.
4. Slowly add the milk a little at a time while continuing to whisk. Keep stirring as the sauce thickens.
5. Turn off the heat to the saucepan and add half the cheese to the white sauce stirring to combine. When it has fully melted through, add the second half of the cheese and stir to combine.
6. Add the bacon to the cheese mixture, then drain the pasta and mix the sauce through the pasta. Serve with crusty bread.

I find this little plastic coated whisk perfect for making sauces and gravies.
