Easy Holiday Baking – One Cup Loaf

Easy Holiday Baking – One Cup Loaf

This is not my recipe, however it is probably one of the most versatile, failure-proof and easiest recipes I’ve come across.  It’s a Help! I have nothing for morning tea! type of recipe.  It’s very easy to make if time is limited (when friends ring up and say, We’ll be there in an hour). And it’s fantastic to make with kids (because there is no fighting over who gets to lick the beaters – the wooden spoon is all mine {insert wicked laugh}!).

Ingredients:
* 1 cup self-raising flour
* 1 cup brown sugar
* 1 cup milk
* 1 cup coconut
* 1 cup sultanas/choc-chips/dried fruit/nuts

Mix all ingredients together and bake in 180-degrees-Celsius oven for about 40 minutes. (The loaf is quite moist, so cooking time will vary, depending on your oven).

Some other variations we have tried:
* Add 1 tbspn (or more…) of cocoa powder.
* White choc chips/dried apricots.
* Walnuts/dried apple.

She writes at Aspiring Mum – which was conceived in order to encourage other mums through the often tiresome journey of motherhood.  While not proclaiming to be an expert (except, perhaps in nappy changes), Debbie writes to share ideas, inspiration and encouragement on all things mothering. Jolene enjoys writing, sharing and connecting with other like-minded women online – it also gives her the perfect excuse to ignore Mount-Washmore until it threatens to bury her family in an avalanche of Skylander T-shirts and Frozen Pyjama pants. (No one ever knows where the matching top is!) Likes: Reading, cooking, sketching, dancing (preferably with a Sav Blanc in one hand), social media, and sitting down on a toilet seat that one of her children hasn’t dripped, splashed or sprayed on. Dislikes: Writing pretentious crap about herself in online bio’s and refereeing arguments amongst her offspring.
