Easy Holiday Baking – One Cup Loaf
This is not my recipe, however it is probably one of the most versatile, failure-proof and easiest recipes I’ve come across. It’s a Help! I have nothing for morning tea! type of recipe. It’s very easy to make if time is limited (when friends ring up and say, We’ll be there in an hour). And it’s fantastic to make with kids (because there is no fighting over who gets to lick the beaters – the wooden spoon is all mine {insert wicked laugh}!).
Ingredients:
* 1 cup self-raising flour
* 1 cup brown sugar
* 1 cup milk
* 1 cup coconut
* 1 cup sultanas/choc-chips/dried fruit/nuts
Mix all ingredients together and bake in 180-degrees-Celsius oven for about 40 minutes. (The loaf is quite moist, so cooking time will vary, depending on your oven).
Some other variations we have tried:
* Add 1 tbspn (or more…) of cocoa powder.
* White choc chips/dried apricots.
* Walnuts/dried apple.
