Asian Glazed BBQ Chicken Recipe
Looking for dinner in a hurry that looks and tastes like you spent hours slaving over it but in reality it only took you FIVE minutes? Then read on!
On your way home from work/gym/school pick-up/fill-in-the-blank stop at the supermarket and grab a cooked, roasted chicken and to be healthy – some green vegetables. Come home, make a simple glaze from a handful of ingredients (OK, you might have to pick up the char siu sauce too from the Asian aisle), paint it on the chicken and pop it in the oven. While that’s happening throw your veggies in a steamer for a few minutes, toss them in a dry pan to crisp up with a bit of oil and oyster sauce and voila you have yourself a gourmet meal and NO ONE is the wiser. Except the kids who may or may not have witnessed your purchases but they won’t care because it’s so delicious.
Ingredients
1 hot whole roast BBQ chicken
1 bunch broccolini
Sugar snap peas, trimmed
2 tbsp peanut oil
1 tsp sesame oil oyster sauce, to drizzle
Glaze
¼ cup maple syrup
¼ cup firmly packed brown sugar
½ cup char siu sauce
2 star anise
½ tsp Chinese five-spice powder
To make the glaze put all the ingredients in a small saucepan over low heat stirring until sugar has dissolved. Simmer for 5 minutes then paint over the chicken and pop in the oven for a few minutes. Steam the greens for 5 minutes then transfer to a small frypan with a drizzle of olive oil and stir-fry until lightly browned. Add a splash of sesame oil, some sesame seeds and a drizzle of oyster sauce.
