Barbeque or Campfire Pizza Pockets & Dessert Pockets

Now that the weather is warming up, my family and I like to head down to our local park and take advantage of extended light during the daylight savings period.

It’s a great way to unwind after a day at work, and for the children to burn off any excess energy after spending the afternoon sitting at a school desk.

It’s also a great excuse for me to get out of the kitchen. (No dishes to wash. Even better!)

Preparing a meal to take with us means that we don’t have to cut the fun short – and it needn’t mean any extra work. In fact, these pizza hot pockets are ridiculously easy to make. Transported in an esky, they can be kept fresh and cool with ice-blocks and heated up quickly on a public BBQ at your local beach or park, or even on the campfire.

I can see us using this recipe many times over the coming months – particularly during the school holidays when we venture further from home. The great thing about them is that they are so versatile, and can be filled with any combination of toppings. My kids never tire of them – what kid doesn’t love pizza?

The lovely melted mozzarella cheese is excellent for disguising any extra veggies you might put in too!

Ingredients

Mission Original Wraps

Pizza topping paste/tomato paste

Mozzarella Cheese

Your favourite pizza toppings (I have used semi dried tomatoes, pineapple chunks, red capsicum, salami).

Aluminium foil

 

Method

Prepare at Home

  1. Warm the wraps according to the package instructions – this will ensure that your wraps are pliable when you come to roll them.
  2. Add a tablespoon of pizza topping paste or tomato paste to your wrap. Spread around the centre of the wrap. (Don’t spread to the edges as it will make it difficult to roll and messy to eat! I leave approx. 3cm gap around the edges of mine).
  3. Add your pizza toppings of choice. Top with mozzarella.
  4. Fold the top and the bottom of the wrap down before rolling to make a parcel.
  5. Wrap in aluminium foil.

Heat at Venue

  • Heat on a BBQ or campfire. Cooking time will depend on the temperature of your cooking technique. You’re aiming to cook it long enough to toast the wrap lightly and melt the mozzarella. I usually go by smell. Once I can smell toasty wraps in the air – it’s a good sign that they are ready!

This recipe also works as a dessert. Just swap the savoury ingredients for fruit, nuts, chocolate, marshmallows, etc. Don’t be afraid to get creative!

For a sweet variation, we used Mission Soft and Fluffy Wraps again, but the original wraps work just as wellTop with banana or strawberry, mars bar (chopped), and marshmallows. Simply wrap them into parcels as above and cover in foil ready to be heated.
