Beston’s Mexican Tacos Recipe

Lean beef mince, tomato puree, loads of Mexican spices, mushroom, carrot, spinach, cucumber, capsicum, tomato, lettuce. Once again, another recipe guaranteed to satisfy while ticking all the boxes for protein and loads of fantastic freshly picked produce.
Ingredients
500g lean beef mince
8 taco shells
500ml tomato puree
¼ cup chopped Beston market farm fresh capsicum, chopped
½ cup Beston market farm fresh spinach leaves
1 Beston market farm fresh carrot, grated
1 Beston market farm fresh red chilli, de-seeded, finely chopped
2 cloves Beston market farm fresh garlic cloves, finely chopped
6 Beston market farm fresh mushrooms, sliced
¼ Beston market farm fresh cucumber, thinly sliced
1 Beston market farm fresh tomato, diced
¼ tsp cayenne pepper
¼ tsp cumin powder
¼ tsp chilli powder
splash Tabasco sauce
sea salt & cracked black pepper
handful Beston market farm fresh Cos lettuce
Method
In a large fry pan over medium heat, brown mince. Add the garlic, chilli, cayenne, cumin, chilli powder, tabasco, salt and pepper and continue to cook for 1-2 minutes or until fragrant.
Add the tomato puree and stir to combine. Cook for 1-2 minutes then add the capsicum, spinach, carrot, and mushrooms.
Bake the taco shells according to packet directions.
Serve filled with lettuce, beef mixture and top with fresh tomato & cucumber.
