Cauliflower Steaks Recipe
If you’re having trouble getting your kids to eat their vegetables, or just feel like a meat-free night but still want something substantial, why don’t you give these cauliflower steaks a try?
I love cauliflower any way it comes but my husband is not a fan so I am constantly trying to disguise it (usually under great mounds of cheese sauce). Cauliflower is so versatile people are using it as fake rice, chopped up in a blender or even as pizza crusts (seriously, don’t do that, if you’re going to eat pizza – make it real people).
Anyway, these are simple, fast, cheap and delicious. You need to cut up your ‘steaks’ by keeping the stem intact and slicing dead down the middle stem-side up. You should be able to get four decent size pieces out of it if your cauliflower starts off at a decent size and then you can use all the other bits left-over for another day.
Whether you want them with a spice-kick or with a bit of crunch, these are great as a hearty side dish or as a main.
Parmesan Baked
4 cauliflower steaks
2 eggs
1 cup grated parmesan
1/2 cup panko breadcrumbs
2 tsp chopped thyme leaves
1 tsp garlic powder
Pre-heat oven to 200C/450F. Line a baking tray with non-stick baking paper.
Whisk the eggs together in a small bowl. Mix the remaining ingredients together on a large plate.
Brush each side of the cauliflower generously with egg then dip into the parmesan mixture. Lay on the tray and spray with oil. Bake for 30 minutes, carefully turning halfway through.
Pan Fried with Turmeric
4 cauliflower steaks
2 tbsp. olive oil
3 tsp turmeric
1 tsp paprika
50g butter
1 thinly sliced garlic clove
1 tbsp. lemon juice
2 tsp lemon rind
1 cup chopped parsley
sea salt and cracked black pepper
Brush the steaks with olive oil on each side. Sprinkle with turmeric and paprika and season with salt and pepper. Pan fry over medium heat for 5 minutes on each side. Carefully remove from pan. Add another drizzle of oil, the butter, garlic, lemon juice and parsley and stir until garlic is slightly softened. Spoon the juices over the steaks (or return the steaks to the pan to keep warm).
