Serves: 4-6
Prep time: 10 minutes
Cook time: 40 minutes
Difficulty: EASY
Ingredients:
500 grams beef mince
1 brown onion diced finely
1 clove garlic, crushed
1 tablespoon Worcestershire Sauce
1 tablespoon dried Italian herbs
2 tins diced tomatoes
1 beef oxo, dissolved ¼ cup of water
2 tablespoons soy sauce
Salt and pepper to taste
250gms dried macaroni
2 cups grated tasty cheese
Half a punnet of cherry tomatoes
Handful of fresh basil, sliced thickly
1 large sprig of rosemary, leaves removed
Method:
1. Preheat oven to 180°C. Heat a heavy based frying pan to medium heat and brown the mince, breaking up with a spoon as it cooks. Remove from the pan to a fine metal strainer to drain the excess fat.
2. Fry the diced onion and garlic until soft, about 5 minutes, then return the mince to the pan. Add the Worcestershire sauce, herbs, beef oxo and water, soy sauce, salt and pepper and the two tins of crushed tomatoes. Stir well and reduce the heat and allow to simmer for 10 minutes or until slightly thickened.
3. Meanwhile boil the macaroni in a large pot of salted boiling water until just tender. Drain well and mix through mince mixture and pour into a large rectangular casserole dish. Sprinkle with grated tasty cheese, fresh chopped herbs and cherry tomatoes and bake for 20 minutes or until the cheese is starting to brown and the tomatoes start to wrinkle. Serve with lots of garlic bread.
