Easy Christmas Rocky Road Recipe

Trying to come up with great gift ideas at Christmas for family, friends and teachers can be tough – not to mention expensive. Often many of the best Christmas gifts are those that have been made with love and have come straight from the heart. I love to give our loved ones treats we have made for Christmas – just like this Chocolate Rocky Road. This is a great recipe to make with the kids as there is lots of measuring, pouring and mixing involved and you can really let your (or the kids!) imagination run wild when it comes to the combination of ingredients.
Once your Rocky Road has set and you have cut it into pieces, simply wrap a few pieces in cellophane and decorate with some ribbon for a perfect (and delicious!) Christmas gift.

You will need:

  • 375g bag of milk chocolate melts
  • 1 pack of pink & white marshmallows
  • 1 cup of mini pretzels plus a few extra to decorate
  • 1/4 cup of crasins
  • 1/2 cup shredded coconut
  • 1/2 cup raw cashews

Let’s put it together:

Line a loaf tin with baking paper, making sure you leave paper overhanging the sides.
Melt the chocolate in the microwave, cooking for 30 second spurts until melted.
Add marshmallows, cashews, coconut, crasins & pretzels and stir until coated with chocolate.

Pour into a loaf tin lined with baking paper, decorate top of slice with remaining pretzels
