Easy Oven Baked BBQ Chicken Recipe
It would seem that a large majority of people who do the bulk of dinner cooking like meals that are fast. That are easy. That are done in one tray/pan/dish. And that chicken, in particular, is a hands-down winner. So I have been keeping an eye out for recipes that fit this brief and of all places I came across a photo on my iPhone from God knows when of a list of ingredients that sounded like it should be good on….well….chicken. I have a habit of taking sneaky photos of recipes wherever I come across them so I don’t have to buy a whole magazine for one recipe and I feel bad ripping stuff out of magazines in the waiting room or at the hairdresser but I don’t want to look like a tightarse either so I take a quick, sneaky shot and then I forget about it and then I don’t know what it is because although I read the steps at the time, I have forgotten them by the time I find the photo.
Anyway, the ingredients were right up my alley; Worcestershire, Tabasco, chilli flakes, apple cider vinegar etc. So I bought some chicken breasts, threw the marinade into a zip-lock bag along with the chicken (for even less washing), then lined a baking tray with baking paper (you see where I’m going with this by now don’t you)? And baked it for half an hour. No mess, no fuss, no washing up and it was delicious. Served with a simple salad it was dinner in a hurry.
Ingredients
- 4 chicken breasts
- 3/4 cup ketchup
- 3tbsp. brown sugar
- 2 tbsp. Worcestershire sauce
- 1/4 tsp dried chilli flakes
- sea salt flakes
- Tabasco sauce to taste
Instructions
- Mix all the ingredients together in a large bowl or zip-lock bag (even better to save washing) and pop in the chicken breasts to marinate for at least half an hour but as long as you can.
- Pre-heat oven to 180C/350F. Line a baking tray with baking paper and place the chicken on the tray, tipping excess marinade over the top. Bake for approximately half an hour or until chicken is cooked through and the juices run clear when pierced. Allow to rest for 5 minutes before slicing and serving.
