Lemon Butter Cake Recipe
If there was ever a recipe that takes me straight back to my childhood, it would have to be this Lemon Butter Cake. This was a staple in our house growing up, with my Mum making it without fail each Sunday.
While this recipe may be a little different to the one Mum used to make (and I know she would have never dreamed of using a Thermomix to make it!) it still retains the essential original elements – light, moist, tangy and delicious.
Lemon Butter Cake Recipe
Ingredients
- 125g of butter - softened
- 1 teaspoon of vanilla extract
- 1 cup of caster sugar
- 3 eggs
- 1 1/2 cups of plain flour
- 1/2 teaspoon of baking powder
- 1/4 teaspoon of bicarbonate of soda
- 1/2 cup of milk
- 1 tablespoon of finely grated lemon rind
- For the Lemon Icing you will need:
- 1 1/4 cups of icing sugar
- 2 tablespoons of freshly squeezed lemon juice
Instructions
- 1. Line a large loaf tin with baking paper and preheat your oven to 150 degrees.
- 2. In the bowl of an electric mixer, add the butter, vanilla extract, caster sugar, eggs, flour, baking powder, bicarbonate of soda, milk and lemon rind.
- 3. Mix on a low speed until all the ingredients have combined and then increase to a medium/high speed and mix until the mixture is smooth.
- 4. Pour the mixture into your prepared cake tin and place in the oven to bake for 50 minutes or until the cake is cooked through when tested with a skewer.
- 5. Carefully remove the cake from the oven and let it cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely.
- 6. Once cool, prepare the lemon icing by sifting the icing sugar into a bowl and adding the lemon juice. Mix the ingredient together until they are smooth.
- 7. Use a spatula or a butter knife to then spread the icing over the cake.
- Thermomix Instructions

- 2. Place the softened butter into your Thermomix bowl and mix 2 minutes on speed 3 until it is pale and creamy.
- 3. Once the butter is pale and creamy, with your Thermomix still running on speed 3, add the eggs one at a time and mix for 20 seconds.
- 4. Add the remainder of your ingredients and mix for 1 minute on speed 6 or until your mixture is smooth.
- 5. Pour the mixture into your prepared cake tin and place in the oven to bake for 50 minutes or until the cake is cooked through when tested with a skewer.
- 6. Remove the cake from the oven and let it cool in the tin for 10 minutes before carefully transferring to a wire rack to cool completely.
- 7. Once cool, prepare the lemon icing by sifting 1 1/4 cups of icing sugar into a bowl and adding 2 tablespoons of lemon juice. Mix the ingredient together until they are smooth.
