No-Fail Cupcake Recipe

Sometimes it’s the simple things that are the best. I mean, who can resist a plain vanillaΒ homemade Cupcake when it’s topped with icing that is both delicious and easy and thenΒ decorated with 100s and 1000s?
This recipe is practically no fail, all you need to do is combine the ingredients in the bowlΒ of an electric mixer for a few minutes, pop them in the oven and in no time you will beΒ enjoying one of these gorgeous cakes.
Your kids can also get involved with jobs like sifting, cracking eggs, measuring ingredientsΒ – and don’t forget licking the bowl! With school holiday around the corner, these cupcakesΒ are the perfect accompaniment to your picnic, playdate or tea party.
What you will need:
Cupcakes
120g unsalted butter – softened
2/3 cup caster sugar
1 1/2 cups self raising flour
1/2 cup milk
2 teaspoons vanilla essence
2 eggs
Icing
1 1/2 cups icing sugar mixture
1 teaspoon of softened butter
1 1/2 tablespoons of boiling water
Food colouring (optional)
To make the cupcakes:
Preheat your oven to 180 degrees and line a 12 hole muffin tin with paper cases.
Place the butter, sugar, flour, milk, vanilla and eggs in the bowl of an electric mixer andΒ beat on a low speed for 2 minutes.
Increase your mixer speed to high, and beat for a further 2 minutes or until mixture isΒ smooth and pale.
Spoon the mixture into the paper cases and bake for 20 minutes or until golden andΒ cooked through.
Remove cupcakes from the oven and allow to cool for 5 minutes in the baking tray beforeΒ carefully transferring to a wire rack to cool completely.
To make the icing you need to:
Place the icing sugar, butter and hot water in a small bowl and whisk together untilΒ smooth. Add a couple of drops of your chosen food colouring and continue to whisk untilΒ combined.
Use a spatula to ice your cupcakes and sprinkle with 100s and 1000s to decorate.
* Tip – if you find your icing is a little thick, add 1/2 teaspoon of boiling water.
