The Perfect Scone Recipe
Scones are one of life’s simple pleasures. There really isn’t anything much better than biting into a scone covered in a thick layer of sweet jam and topped off with a dollop of cream.
There are so many variations of the humble scone recipe out there, but this would have to be one of the easiest (and yummiest) recipes going around – it is the perfect scone recipe. Just follow a few simple tips, and you will have great scones in no time.
1. Use cold butter – straight from the fridge is best.
2. Use a butter knife to combine your ingredients – don’t over mix!
3. Flatten the dough gently with your hands – not a rolling pin.
4. Place your scones close together on the baking tray – you want them to almost be touching.
5. Bake in a VERY hot oven – the hotter the better!
You will need:
- 4 cups of self raising flour
- pinch of salt
- 1/4 cup of butter – chilled and cubed.
- 2 1/3 cups of milk – plus 1/4 cup extra to brush the top of the scones with before baking.
Let’s put it together:
Preheat oven to 230 degrees C (445 F), and line a baking tray with baking paper.
Sift the flour and salt together in a large bowl.
Rub the cubed butter into the dry ingredients until it resembles breadcrumbs.
Slowly add approximately 2 cups of milk whilst gently mixing in with butter knife. If your mixture is still a little dry, add a bit more milk.
Once dough is starting to come together, pour onto floured bench. Using your hands, gently bring the dough together and flatten slightly.
Cut out your scones using a round cutter, and place close together on the tray.
Brush a little milk over the top of scones before placing in the oven for 13 minutes.
To test is scone is cooked, it will make a hollow sound when the bottom is tapped.
