Three Ingredient Popcorn Chicken Recipe
My kids pretty much LIVED on chicken nuggets when they were little. Whether they were in a happy meal or out of my freezer they ate a shit-ton of them. Mostly because they loved them and were fussy eaters but also because it was just so bloody easy to do.
And even if you wanted to make your stock-standard regular chicken nuggets at home who wants to smell up the kitchen with a greasy deep-fryer and deal with minced chicken as well? Yeah, didn’t think so.
Which brings me to this fast, easy, delicious alternative which is made solely from chopped chicken breasts (so you don’t have to worry whether you’re feeding your kids the freaky weird chicken parts that no one wants to discuss), some BBQ sauce (what kid doesn’t love BBQ sauce) and lastly, crushed potato chips (no-brainer there for the yum-factor).
And, drum-roll please, they are oven-baked. Not a drop of oil or fry pan to be found so clean-up is just a bowl, a plate and did I mention you are going to line the baking tray with non-stick baking paper so no mess there either?
We love these with chilli chips because we are addicted to chilli in all its’ forms but use whatever flavour chips are your favorite; honey soy, BBQ etc. I made these last night for my grown-up kids and they were devoured!
2 chicken breasts, cut into nugget size pieces
3/4 cup BBQ sauce
200g bag of your favorite chips (highly recommend Chilli or BBQ), crushed
Pre-heat oven to 180C/350F.
Line a large baking tray with non-stick baking paper.
Toss the chicken pieces with the BBQ sauce to evenly coat.
Put the chips on a plate and coat each chicken piece on both sides and transfer to the tray. Bake for 15 minutes. Serve with your favorite dipping sauce.
