Beston’s Carrots with Cumin and Honey Glaze
Here’s a way to get everyone to polish off their carrots with a fast and easy glaze on some of Beston’s finest market fresh carrots.
These are oven-baked and have only a tiny amount of oil together with a bit of zing from the mustard, cumin and vinegar and a bit of sweetness from the honey. If you like you can also toss these onto the BBQ for those char-marks everyone loves. This dish is a perfect side dish for a special occasion and goes great with beef, chicken or lamb!
Ingredients
3 tbsp honey
1 tbsp olive oil
2 tsp Dijon mustard
2 tsp white wine vinegar
1 tsp ground cumin
2 bunches Beston Market Farm fresh small carrots, peeled & trimmed
Method
Pre-heat oven to 200C.
Place the carrots in a large pot of water, bring to the boil and cook for 4 minutes. Remove from heat and drain.
Mix the honey, olive oil, white wine vinegar, mustard and cumin together in a small bowl.
Line a small baking tray with non-stick baking paper. Add the carrots and glaze and toss to combine. Bake for approximately 20 minutes, tossing occasionally until golden.
Serve immediately.
