Beston’s Cauliflower with Minted Curry Yoghurt Recipe

Ingredients

1 head Beston Market Farm fresh cauliflower
200g Beston B. – D. Farm Paris Creek Natural Swiss Style Yoghurt
2 tbsp Beston Market Farm Fresh mint leaves, finely chopped
1 tsp curry powder
cracked black pepper

Method

Cut the cauliflower into florets and place in a large pot with a few centimetres of water. Cook for approximately 8 minutes or until just tender. Drain.

Meanwhile in a small bowl, mix together the yoghurt, mint and curry powder. Season with cracked black pepper and combine to mix.

Pour the yoghurt mixture over the cauliflower and serve immediately.
