Cherry Ripe Brownie Ice Cream Recipe
How delicious does this ice cream look? I swear to you that this is BETTER than Baskin Robbins ice cream and I will happily, on a regular basis, drive out of my way to track down a Baskin Robbins because their ice cream is so delicious.
And?! No ice cream maker required!! All you need is a bowl, a whisk and just a few ingredients to make this super rich, velvety, creamy, delicious dessert.
I literally made this in 10 minutes (apart from the brownie cooking type).
So, here’s all you need:
1 can sweetened condensed milk (low-fat OK)
300ml thickened cream
2 tbsp unsweetened cocoa powder
1 tbsp chocolate liqueur (optional)
10 fun-size Cherry Ripe chocolate bars, cut into small pieces
1 packet mix of Brownies, prepared according to directions (or use your favorite recipe)
Here’s what you do:
Prepare brownies, set aside pan to cool (I put mine in the fridge to speed things up).
Mix together condensed milk, cream, cocoa powder and liqueur (if using) with whisk or electric beaters until firm peaks form. Leave in fridge until brownies are completely cool. Then crumble about half the brownie tray into small pieces and mix with the cherry ripe pieces through the ice cream mixture. Place in a freezer-safe container and freeze for around 6 hours (preferably overnight).
