Family Friendly Chicken Caesar Salad Recipe
Chicken Caesar Salad
If you are looking for a salad the whole family will enjoy, then this is the recipe for you! A twist on a classic caesar salad, the addition of chicken turns this into a complete meal even the kids will enjoy!
To make this yummy salad, you will need:
500g chicken breast
1 baby cos lettuce
2 rashers of short cut bacon
3 eggs
3 slice of thick bread (preferably a couple of days old)
1/4 cup parmesan cheese – finely grated
1 teaspoon olive oil
For the dressing:
1/2 cup of mayonnaise
1/2 tablespoon of lemon juice
1/2 teaspoon worcestershire sauce
1/4 cup finely grated parmesan cheese
1 small clove of garlic – finely crushed
sprinkle of salt and pepper to taste
Let’s put it all together:
First, you will need to make the dressing.
Combine all ingredients in a small bowl and whisk together. When combined, cover and place in the fridge.
Toast the two slices of bread in the grill until they turn light brown. Use Kitchen Scissors to cut into small pieces and set aside to cool completely.
Place the eggs in a small saucepan half filled with water and cook as desired – I suggest hardboiled eggs for little people.
One the eggs are cooked to your liking, remove saucepan from the heat and carefully drain the hot water.
Fill the saucepan with cold water to allow the eggs to cool.
Add the olive oil to a medium frying pan, add the chicken breast and cook over a medium/high heat until cooked through. The cooking time will vary depending on the size of the chicken breast.
When the chicken is almost cooked through, add the bacon, as it will only take 3 -4 minutes to cook.
While the chicken and bacon is cooking, peel the cooled eggs and set aside until needed.
Remove the cooked chicken and bacon from frying pan. Using kitchen scissors, cut the bacon into small pieces. Allow the chicken breast to rest for a couple of minutes before slicing as required.
Arrange the lettuce on your plates, add the chicken, cooked eggs, chopped bacon, croutons and sprinkle with parmesan cheese. Drizzle dressing over salad as desired.
