Christmas Tea Cookies Recipe

Last week we shared this delicious recipe for gingerbread cupcakes with cinnamon-clove frosting to get you in the festive spirit. This week we’ve got these tasty Christmas tea cookies – perfect with a cup of warm milk or for leaving out for Santa and his reindeers on Christmas Eve!

Preparation time: 20 minutes

Cooking time: 15 minutes

No. of serves: 20

 

Ingredients

1 cup water

2 cups raisins or sultanas

1 cup butter, softened

1 ½ cups brown sugar

2 eggs

1 tsp vanilla essence

1 tbsp grated orange rind or ½ tsp orange essence

2 tbsp McCormick Allspice Ground

1 tbsp McCormick Cinnamon Ground

3 ½ cups plain flour

1 tsp baking powder

1 tsp baking soda

1 tsp salt

 

Method:

Preheat oven to 180C.

In a saucepan, bring water to the boil. Then add raisins and boil for 2-3 minutes. Set aside and allow to cool.

In a large mixing bowl, cream butter with the sugar. Then add eggs, vanilla essence and orange rind.

Separately mix together all remaining dry ingredients, including the McCormick Allspice and Cinnamon, then fold through the butter mixture until well combined.

Mix through the raisins with the water they were boiled in and stir thoroughly.

Using a tablespoon, place spoonfuls of mix onto greaseproof paper lined baking tray. Bake in oven for 10-15 minutes or until cooked through and lightly coloured.
