Dried Strawberry, Honey and Brown Rice Snack Bars Recipe
These delicious and healthy honey and brown rice snack bars made with fresh juicy Victorian strawberries – dehydrated in your oven. Quick and easy to make – these snack bars will be a perfect afternoon tea snack or lunchbox treat, the whole family will love.
1 punnet Victorian Strawberries
¼ cup honey
¼ cup butter (or a creamy sunflower seed butter)
2 cups puffed brown rice cereal
¼ cup rolled oats
1 Tbs Chia seeds
1 cup desiccated coconut (optional).
Preheat oven to 160-180 degrees Celsius.
Cut strawberries into quarters and place on a baking tray. Dehydrate in the oven until reduced by half the size. Set aside to cool.
Combine butter and honey in a small bowl, mix well and then microwave for 30 seconds.
In a large bowl, add the rice cereal butter honey mixture and stir to combine. Fold in your Victorian strawberries, coconut, chia and oats and gently mix.
Press the mixture into a small slice tray that has been lined with baking paper. Spread the mixture evenly and then place in the refrigerator to chill for 30 – 40 minutes.
Cut and serve with your favourite juicy Victorian Strawberries! Store in the refrigerator.
