Easy Chicken and Vegetable Rolls Recipe
When I think about snacks to enjoy during winter, there is nothing better than a homemade sausage roll fresh from the oven. For something a little bit different, I decided to try something a little different and created these easy Chicken and Vegetable Sausage Rolls which are packed full of veggies, taste great and are a perfect snack for a cold winter afternoon.
Easy Chicken and Vegetable Rolls Recipe

Ingredients
500g Chicken Mince
5 sheets of frozen Puff Pastry
1 medium zucchini – grated
1 carrot – grated
1 brown onion – grated
¼ cup of Corn Kernels
1 tablespoon Sweet Chilli Sauce
1 tablespoon Honey
1 tablespoon of Tomato Relish
1 teaspoon Soy Sauce
1 egg – lightly whisked.
Instructions
Line two trays with baking paper and preheat your oven to 200 degrees.
Remove the puff pastry from the freezer and sit it on your bench to let it thaw slightly
Crack an egg into a small bowl and lightly whisk.
In a large bowl combine the mince, zucchini, carrot, onion, corn, sweet chilli and soy sauce, tomato relish and honey.
Place a pastry sheet on your bench and cut in half with a sharp knife. Brush along the edges of the pastry with the beaten egg.
Scoop the mince mixture and position in the middle of the pastry sheet
Carefully roll the pastry over the top of mince mixture to fully enclose it. Cut sausage rolls into six equal pieces.
Brush the tops with egg and place on a tray lined with baking paper.
Place in oven and bake for 35 minutes or until pastry is crisp, golden and the sausage rolls are cooked through.
