Molten Chocolate Brownies Recipe
I have made a shite-load of brownies in my life. I see a brownie recipe and I must try it. We are brownie-obsessed in our house. And I’ve made blondies with white chocolate, brownies stuffed with cookies, brownies with salted caramel. I’ve bought Donna Hay’s packet mix brownies as well as Costco (which are really good BTW) but nothing compares to these ones. With two kinds of sugar to add crunch on top and ooze to the centre they have the perfect height, the perfect width, the perfect amount of chocolate and OMG were they good. These are the bees knees, da shiz biz, and more.
They are super squishy and oozy and oozing when they come out of the oven – eat them warm, poke your finger in them, poke your FACE in them. Or, if you are patient pop them in the fridge to firm up to make for easy slicing. If you want them oozy again, 30 seconds in the microwave and you’re good to go!
I honestly don’t know how brownies could EVER be any better than these ones.
1 cup (150g) plain flour
3/4 cup (75g) cocoa
3/4 cup (130g) brown sugar
1 1/3 cups (290g) caster sugar
175g unsalted butter, melted and cooled slightly
1 tsp vanilla extract
3 eggs
125g dark chocolate chips
3/4 cup chopped walnuts
Pre-heat oven to 180C/160C fan-forced/350F.
Line a square 20cm baking tray with non-stick baking paper.
Mix all ingredients together in a large bowl
and tip into the pan, smooth the surface
and bake for 40-45 minutes (the top should be just set when you touch it).
Allow to cool in the pan and either serve warm or cold. It will slice much easier when you have chilled it in the fridge for a few hours and you can easily pop a slice on a plate into the microwave for 30 seconds to return it to oozing and melty.
