Prosciutto Wrapped Maple Chicken Recipe
Cooking chicken breasts can be tricky as they can be really thick, the ends are thinner then the middle, when are they done? Are they over done? It’s really disappointing to cut into a piece of chicken and find out it’s dry and horrible. So for one thing you should really invest in a digital meat thermometer but another trick is to wrap it in something for a bit of protection like prosciutto or bacon. And the bonus is you get to eat that crispy prosciutto or bacon. Extra flavour people. And when brushed with a bit of maple syrup? Um, heavenly.
Plus there’s a little spice rub on the chicken before they get wrapped up so you get another hit of flavour. You don’t have to use the same spices here but garlic, chilli and paprika are my favorite. They go on just about everything. And dill. Dill is good on everything too!
1 tbsp. garlic powder
2 tsp paprika
1/2 tsp chilli powder
cracked black pepper
2 chicken breasts, skin on or off
6 slices prosciutto
4 tbsp. maple syrup
Pre-heat oven to 200C/450F. Line a baking tray with baking paper.
Mix the garlic powder, paprika, chilli powder and pepper together in a bowl. Rub all over the chicken breasts.
Wrap three slices of prosciutto around each chicken breast.
Bake for approximately 25 minutes or until nearly done. Remove from oven and brush all over with the maple syrup and return to oven for another 5 minutes or until chicken juices run clear when pierced with a knife and it is cooked through.
