Slow Cooker Beef and Broccoli Recipe
Do NOT tell my husband this dish was made in a slow-cooker. He has it in his head that anything made in a slow-cooker is cheating. If you haven’t slaved over the stove/oven/BBQ watching your meal at every second of its’ production then you are a lazy cook and it won’t be worth eating. In fact, he doesn’t even know I own a slow cooker and he made me throw away the first one I bought. Seriously, to the kerb it went. He is such a snob. The only way I was able to pull this off is because my sous vide machine actually doubles as a slow cooker (shhh).
This was supremely easy – throw everything but the broccoli in the slow-cooker and ummm, walk away for 5 hours, throw in the broccoli and…walk away again for another 1/2 hour. Then yell at everyone to come and get it.
And it was delicious. Tender slices of lean beef just melt in your mouth drowning in a rich sauce of soy sauce, oyster sauce, beef broth, garlic, onion, brown sugar and sesame oil. Of course you need to throw in some broccoli to make it super healthy but this is a tasty, low-fat meal that even the kids will devour. Boil up a pot of fluffy rice to soak up all the extra sauce and get stuck in.
Ingredients
1 cup beef broth
1/2 cup soy sauce
1/4 cup oyster sauce
1/4 cup brown sugar
3 garlic cloves, finely chopped
1 small onion, finely chopped
1 tbsp. sesame oil
1kg finely sliced quality steak (rump etc)
4 tbsp. cornflour
1 head of broccoli florets
Method
Mix the beef broth, soy sauce, oyster sauce, brown sugar, sesame oil, garlic and onion together in a small bowl and transfer to your slow cooker. Add the steak and stir to combine. Cook on low for 4-5 hours or on high for 2 1/2 hours. Mix the cornflour with enough water to form a paste and stir into the sauce and add the broccoli. Cook for another half an hour. Serve with fluffy rice.
