Bailey’s Fudge Recipe
Don’t you just love a dessert that you can keep away from little fingers with the excuse: “sorry kids, that has ALCOHOL in it so you can’t have any”. So it’s all for YOU!
The traditional way of making fudge can be time consuming and tricky with candy thermometers an essential requirement and lots of patience so I haven’t really ever bothered! Until now. This supremely simple, no-cook (unless you count melting chocolate in the microwave as cooking) fudge has just 4 ingredients and one of those ingredients is a teaspoon of vanilla which can hardly even be counted so let’s say THREE ingredient fudge; chocolate chips, sweetened condensed milk, and of course Bailey’s. Oh, oops does the crushed mint chocolate on top count as an ingredient? Because then that will be four ingredients. But it’s not in the fudge so technically I’m sticking with three. Anyway, it doesn’t matter – so simple even the kids who aren’t allowed to eat it, can make it.
And what a great gift to wrap up and give to your friends if you can part with any.
We did have an argument in the house as to whether it should remain in the fridge (my preference for firmness) or out of the fridge (my husband’s preference where it was decidedly much softer) but either way is fine!
1 x 397g can sweetened condensed milk
3 1/2 cups dark chocolate chips
1/2 cup Bailey’s
1 tsp vanilla
chopped mint chocolate to decorate
Line a 20cm square baking dish with non-stick baking paper.
Place the condensed milk and chocolate chips in a large microwave safe bowl and heat on high for 1 minute, stir then heat for another 30 seconds. When it’s melted and smooth, stir in the Bailey’s and vanilla and mix thoroughly.
Pour into the baking dish. Top with the chopped mint chocolate and refrigerate for several hours to firm up.
