Baked Cheesy Sloppy Joes

If you have fussy eaters in your house, then you need this recipe in your repertoire. I know we have to feed kids vegetables and salad but sometimes you just want them to eat something. Anything. Anything at all to fill out those skinny little arms and legs and THESE are a winner.

I had sloppy joes when I was a kid and I was a fussy eater and I served them a multitude of times to my kids who were also fussy eaters (I think it’s definitely genetic). Kids love food they can eat with their hands and they love things that are messy. Just tell them they are having Sloppy Joes and their ears will prick up and they will be intrigued. For the sake of the photo, I cut the rolls in half but a less messy way to serve and eat these is to poke a hole in the side of one of the rolls and spoon the meat inside to encase it and then slide the cheese inside!

 

Baked Cheesy Sloppy Joes Recipe

Ingredients

  • 1 tbsp oil
  • 1 brown onion, chopped
  • 2 cloves garlic, crushed
  • 500g minced beef (ground beef)
  • 2 cups tomato passata (puree)
  • 1 tbsp Dijon mustard
  • 1/4 cup apple cider vinegar
  • 1 tbsp brown sugar
  • sea salt and cracked black pepper
  • 6 seeded bread rolls
  • 6 slices tasty cheese
  • Glaze
  • 1/4 cup melted butter
  • 1/2 tbsp dijon mustard
  • 1/2 tbsp Worcestershire sauce
  • 1 tbsp brown sugar

Instructions

  1. Heat a large non-stick frying pan over medium-high heat. Add the oil, onion and garlic and cook for 5 minutes or until golden. Add the mince and cook, breaking up any lumps with a wooden spoon for 10 minutes or until lightly browned. Add the tomato, mustard, vinegar, sugar, salt and pepper and simmer for 5-7 minutes or until the mixture has thickened.
  2. Pre-heat oven to 180C. Halve the rolls and place the bottoms in a baking dish. Spoon the meat on top of the rolls and place a slice of cheese on top of the meat and top with the other half of the roll.
  3. Glaze: Mix together all the ingredients and brush over the tops of the rolls.
  4. Bake for around 15-20 minutes or until the tops are golden and the cheese is melted.
