Easy Chocolate Chip Cookies Recipe

Every home cook needs a no fail recipe for easy Chocolate Chip Cookies and that’s is what we have for you today.  This recipe really is NO FAIL and you are guaranteed to end up with delicious chocolate chip cookies every time you make them.  This recipe can also be easily adapted, why not use white chocolate chips, sultanas, pieces of your favourite chocolate bar or even M&Ms?

By baking these cookies for 10 – 12 minutes you will end up with a cookie that still has a little chew to it.  However, if you like your cookies crunchy – just increase the cooking time by a minute or two.

To make these Easy Chocolate Chip Cookies, you will need:

125 of butter – softened

1 teaspoon of vanilla extract

1 cup of brown sugar

2 eggs

2 cups of plain flour

1 teaspoon of baking powder

1 cup of desiccated coconut

200g of milk chocolate chips

Let’s put it together

1.  Preheat the oven to 190 degrees and line two baking trays with baking paper.

2.  Place the butter, sugar and vanilla in the bowl of an electric mixer and combine until pale and creamy.

3.  Beat through the eggs one at a time and combine well between each addition.

4.  Remove the bowl from the electric mixer stand and carefully stir through the flour, baking powder, coconut and chocolate chips.

5.  Use a tablespoon to scoop up the mixture and roll into balls.  Place the cookie balls onto the baking trays,  making sure you leave enough space in between each cookie as they will spread.  Lightly flatten the top of the cookie and repeat until all the mixture has been used.

6.  Place the baking trays in the oven and bake for 10 – 12 minute or until the cookies begin to brown on top. Allow the cookies to cool on the baking trays for 5 minutes before carefully transferring to a wire rack to cool completely.
