Healthy Chicken Nuggets

Trying to get our kids to each vegetables and foods which are good for them can be hard.  Even when we do manage to ‘sneak’ some vegetables or other good stuff into meals, our kids seem to turn into little detectives and pick out all of the goodness.  It’s a big call, but these ‘Healthy Chicken Nuggets’ are so good, even the best little detective will be too busy enjoying these to notice theyare packed with ingredients that are good for them.

Ingredients:

500g of chicken breast mince

1/4 cup of quinoa

1/2 cup of water

1 zucchini

1/2 cup of breadcrumbs

1 tablespoon of fresh parsley

1/2 cup of very finely grated tasty cheese – use the finest setting on your grater.

1/2 tablespoon of mild paprika – optional

Method:

  1. Preheat your oven to 200 degrees and line two baking trays with baking paper.
  2. Chop the parsley finely and place it along with the bread crumbs, finely grated tasty cheese and paprika (if using) into a small bowl. Set aside until needed.Healthy chicken nuggets1 (1)
  1. Place water and quinoa into a small saucepan and cook over a medium heat until all the water has been absorbed and the quinoa is light and fluffy. Remove from the heat and allow to cool slightly.
  2. Grate the zucchini into a large bowl and add the chicken breast mince and cooled cooked quinoa. Using a large metal spoon, mix until all ingredients are combined.Healthy Chicken Nuggets 3
  3. Use a dessert spoon to scoop up the chicken mixture and roll into balls with your hands.
  4. Place the chicken balls into the bowl with the grated cheese, bread crumbs and herbs and lightly toss until the entire ball is covered.
  5. Place the coated chicken ball on the baking tray. Using the palm of your hand, slightly flatten the ball before using the knuckle of your thumb to indent the side – giving you the shape of a ‘traditional’ chicken nugget.
  6. Repeat this process until all the chicken mixture has been used.
  7. Place the baking trays into your preheated oven, and bake for 20 – 25 minutes or until the nuggets have completely cooked through and are begin to turn golden. To give your nuggets an even appearance, carefully turn them over approximately half way through the cooking time using a pair of tongs.
  8. Remove cooked nuggets from the oven and serve.
