No Bake Chocolate Cranberry Marshmallow Slice Recipe
EVERYBODY knows the best slice is a no-bake slice. There is nothing better than when a recipe comes along which requires a minimum amount of effort with a maximum amount of crowd-pleasing and I’m happy to report that this is one of those times. The only requirements are a loaf tin lined with non-stick baking paper, a pot to melt the chocolate and butter (and no you don’t even need to do the whole “bowl-over-simmering-water” thing), and to remember that the quantities are 75g of your favorite dried fruit, 75g of your favorite nuts and 75g of mini marshmallows. Not only am I giving you a dead easy recipe, I reckon you can even memorise this one so you never even need to look it up again. I used salted peanuts but macadamias, pecans or walnuts would be equally delicious. And I used dried cranberries but again you can use sultanas, dried blueberries or apricots. Just a quick set in the fridge, then slice and serve; perfect to freeze or pop into lunchboxes.
Ingredients
- 300g chocolate, chopped (milk or dark)
- 100g butter, chopped
- 4 tbsp. golden syrup
- 200g digestive biscuits
- 75g dried cranberries
- 75g salted peanuts
- 75g mini marshmallows

- Place the chocolate, butter and golden syrup in a small saucepan over low heat. Stir until melted and smooth. Remove from heat and set aside to cool for a few minutes.
- In a large bowl, crush the biscuits roughly and combine with the cranberries, peanuts and marshmallows. Pour in the chocolate and mix to combine.
- Line a 16cm x 26cm tray with non-stick baking paper and spoon the mixture into the tray. Place more baking paper over the top and press down firmly with your hands. Refrigerate for a few hours until set then cut into slices.
