Haven’t used miso before? Don’t worry, neither had I but you will find it in a little plastic packet in the Asian section of the supermarket. It has a unique nutty flavour. Do not be scared by it. Brown butter? Again, a delicious nutty flavour achieved by whacking some butter in a pan and cooking it a bit further then you would normally into a foamy sauce.

And guess what? I had never bought beef schnitzel cuts before either and/or crumbed beef. I’m not sure why. I guess I figured that was something reserved strictly for chicken breasts but not anymore. I grabbed a packet of sizzle beef from Coles and it was incredibly fast to cook. Paired with some broccolini (which I made first and kept warm in the oven) this was a delicious, hearty, healthy meal that everyone will love. Just be sure and make extras for leftovers.

Ingredients

1/4 cup plain flour
sea salt and cracked black pepper
2 eggs, lightly beaten
1/4 cup white miso paste, divided
1 1/2 cups panko breadcrumbs
1/4 cup sesame seeds
4 beef schnitzels
1/4 cup vegetable oil
80g unsalted butter

Method

You’re going to need 3 shallow bowls. One with the flour and salt and pepper combined. One with the eggs mixed with 1 tbsp. of the miso paste. And the third with the breadcrumbs mixed with the sesame seeds.

Dust the beef in the flour, then dip into the egg, then press into the crumb mixture. Pop them on a plate and keep refrigerated until ready to use if you are preparing in advance.

Place the vegetable oil in a large fry pan and heat over high heat. Cook the beef for 1-2 minutes on each side or until golden brown. Drain on paper towel.

Cook the butter and the rest of the miso paste together in a small frying pan over high heat, whisking until foamy.

Top the schnitzels with miso butter and serve.
