Beston’s Broccoli with Crispy Garlic, Chilli, Pepitas and Almonds Recipe
For lunch or dinner this is a sensational way to transform the humble broccoli into a hearty side-dish or even main meal. Full of flavour, zing and crunch this easy dish is ready in the time it takes to steam your broccoli.
Ingredients
1 head Beston Market Farm Fresh broccoli
1 Beston Market Farm Fresh red chilli, de-seeded, finely chopped
2 Beston Market Farm Fresh cloves garlic, thinly sliced
3 tbsp flaked almonds
3 tbsp pepitas (pumpkin seeds)
1 tbsp sesame seeds
1 tbsp Pendleton Kitchen olive oil
zest of 1 lemon rind
squeeze of lemon juice
Method
Cut the broccoli into florets and place in a large pot and steam until just tender, around 8 minutes.
Meanwhile heat the olive oil in a large fry pan over a medium heat. Add the garlic, chilli, almonds, pepitas and sesame seeds. Cook, stirring until golden, about 2-3 minutes. Remove from heat.
Add the cooked broccoli to the pan and toss to combine, add the lemon rind and a squeeze of lemon juice to finish.
